Staining Kit FH: Hematoxylin & Eosin
The staining kit LH: Hematoxylin & Eosin (H&E) is mainly used in food histology to differentiate different tissue components in food samples and to distinguish plant from animal tissues in food.
The specific binding of hematoxylin to basophilic and eosin to eosinophilic structures enables the differentiation and visualization of cells and tissue structures. At the chemical level, hematoxylin and eosin interact with target structures in food samples due to their opposite charges. Hematoxylin binds to the phosphate groups of DNA and RNA, while eosin binds to proteins.
In the context of the application, this interaction results in differential staining that enables detailed analysis of tissue structures in food samples.
